Ingredients
Meatballs:
1 pound ground beef or lamb or combination
1/2 onion grated
2 garlic cloves grated
2 teaspoons paprika
1 teaspoon cumin
1/2 teaspoon cinnamon
1/4 teaspoon hot paprika
1/4 cup parsley finely minced
1/4 cup cilantro finely minced
salt and pepper to taste
Sauce:
Olive oil or ghee for pan
1 onion thinly sliced or chopped
2 (14.5 ounce) cans diced tomatoes
3 cloves garlic minced
2 teaspoons cumin
1 1/2 teaspoons paprika
1/2 teaspoon cinnamon
1/2 teaspoon hot paprika
3 tablespoons chopped parsley
3 tablespoons chopped cilantro
4 eggs
Instructions
In a medium bowl, combine ground meat, grated onion, garlic, paprika, cumin, cinnamon, hot paprika, salt, pepper, parsley, and cilantro. Use your hands to roll the mixture into 3/4 inch round meatballs.
Drizzle olive oil or ghee over bottom of tagine or deep skillet with tight fitting lid over medium heat. A diffuser is needed for clay tagines. Add the sliced onion and cook until soft. Sprinkle with minced garlic and place meatballs in a mostly single layer over onions. Cook, gently stirring occasionally, until brown on sides.
Pour in enough tomatoes to mostly cover the meatballs. Add the cumin, paprika, cinnamon, hot paprika, and gently stir to combine. Cover, reduce heat to low, and let simmer for 30 minutes.
Remove cover, crack eggs into separate areas among the meatballs, and sprinkle with parsley, cilantro, salt, and pepper. Cover again and cook until eggs are barely set, 7-10 minutes.
Most of us don’t think twice about drinking a glass of water. But a report released Wednesday though, found more than 270 harmful contaminants in local drinking water across the nation. The substances are linked to cancer, damage to the brain and nervous system, hormonal disruption, problems in pregnancy and other serious health conditions.
So I decided to check out my tap water through this link to retrieve information for my specific area by zip code https://www.ewg.org/tapwater/.
Here were my results! Yikes! In my local tapwater, the group found 23 contaminants across our water supply between 2012 and 2017. (which serves ~172,000 people).
Regarding the study:
“The nonprofit Environmental Working Group, collaborating with outside scientists, aggregated and analyzed data from almost 50,000 local water utilities in all 50 states. Read more on the Environmental Working Group’s data sources and methodology. The organization found a troubling discrepancy between the current legal limits for contaminants and the most recent authoritative studies of what is safe to consume. “Legal does not necessarily equal safe.”
In the case of polyfluorinated substances, or PFAs, the environmental group estimated up to 110 million Americans could have the potentially cancer-causing, immune-system damaging contaminant in their drinking water. Yet the EPA requires drinking water utilities across the country to test for only six of 14 known substances in the category.
A variety of other contaminants often found in the water of millions of Americans can profoundly impact health. They include lead, which has been linked to brain damage in small children; arsenic, which can cause cancer; and copper, which can be harmful to infants.
According to the environmental group, many of the 270-plus contaminants detected through water sampling are at levels deemed legal under the federal Safe Drinking Water Act, yet are above levels that recent studies have found to pose possible health risks.
What can we do to mitigate this and protect ourselves?

We are currently using activated carbon filters on our tap water and the refrigerator water dispensor. Bottled water has recently been reported to have microplastics in the bottles that have also absorbed toxins which are then also absorbed into the body. So not the solution I want to go after either.
Additionally, we also use periodic cellular cleansing to rid ourselves of toxins as the process we follow has been tested to be effective at reducing toxins from the body including from visceral fat stores. Check this out: Releasing Toxins.
And lastly, we could do what the Romans did. Drink more wine! That’s what they did in biblical times when water was contaminated!!! Just remember though, everything in moderation!

Ingredients
2 tablespoons olive oil
1 medium red onion chopped
1 yellow bell pepper chopped
1 carrot chopped into cubes
2 cloves garlic minced
salt & pepper to taste
½ teaspoon paprika
½ teaspoon ground coriander
¼ teaspoon turmeric
½ teaspoon celery salt
½ teaspoon ground cumin
⅛ teaspoon ground cinnamon
cayenne pepper optional, to taste
1 cup frozen peas
1 14oz can chickpeas drained
6 Peppadew Piquante peppers chopped, mild or hot
1½ cups chicken stock or vegetable stock
A good handful fresh parsley chopped
1 cup instant couscous
Instructions
In a medium-size skillet heat the oil over medium heat.
Add red onion, yellow pepper, and carrot sauté 10-15 minutes or until all the vegetables are your desired tenderness
Add the garlic, sauté another minute.
Mix in the salt & pepper, paprika, ground coriander, turmeric, celery salt, cumin ground cinnamon, and cayenne pepper (if using). Stir-fry until fragrant (about a minute).
Add the frozen peas and cook briefly. Stir in the piquante peppers and chickpeas. Followed by the stock.
Add the chopped parsley and stir in the couscous. Remove from heat and let stand 5 minutes or until liquid is absorbed. Fluff and serve.
Notes
This recipe calls for instant couscous. Instant couscous is cooked by covering it with water and leaving it to sit for 5 minutes.
Read the package instructions for your couscous. If the directions and measurements, do not match the recipe instructions, just adjust the liquid measurement according to the amount of couscous in the recipe, add the spices and follow then follow the package instructions. Once cooked, add the vegetables and mix to combine.
As I have been shifting from one season into the next, I have taken a pause for a moment to ponder what it is that I should be focused on. Where should I be spending my time, my thoughts, my efforts. Where can I make the biggest impact? How do I find more fulfillment and joy in my day to day accomplishments?
These are a few things that I know about myself, things that I enjoy and that bring me joy –
I love to just come along side people, because everyone needs people. It doesn’t matter what it is I do when I am with them. I could be just lending a hand, providing transportation, playing a board game with them, share a story, an experience, or even seeking clarification on a topic we share. There is a lot of loneliness in this world. Every little thing that can be done, even a simple smile can change a persons’ day, a persons’ world, a persons’ life!
I love to do what I can to stay healthy through movement, exercise, and most recently some hiking and I’ve even joined Orangetheory Fitness which I am really enjoying. I was feeling kinda impacted by just getting older but was able to turn that around first with my diet which I share breifly in a moment. But then after, I was feeling so much younger with more movement, strength, and agility that I wanted to get more serious about my exercise regimen. I’ve also been encouraging some of my friends to join me to be more active through free yoga online, hiking, just riding bikes, simple things that anyone can do.
I love to focus on clean eating. Healthy foods and healthy meals. I love flavor and variety. I wasn’t finding enough variety of healthy and flavorful foods at local restaurants so I started finding my own recipes through internet searches. It’s great that we have all of these recipes at our finger tips instead of those old clunky and dated recipe books on the counter taking up much needed space. I do still have a few that were handed down to me and I will continue to treasure them. I’m just getting started sharing my recipes on my website for my families and friends and plan to do more of that in the future.

Still I keep asking myself, where can I make the biggest impact?
So that is why I have been taking a little pause’ What I am finding is that I need to get my foundation more firm. I need to strengthen my own mindset, my own internal self-talk, my thoughts, and my attitude. I need to stay fueled so that I can fuel others. This takes self-discipline. What I focus on, I become!
If I focus on positive attitudes and thoughts, being mindful and not constantly focusing on what might happen or what could happen, or what didn’t happen in the past, but rather what I desire to happen, then ultimately it will happen! I get to choose!!!
The issue here is that many of us have done the things we do, thinking the thoughts we have, focusing on negative self-talk, telling ourselves the same things for so long that we have developed some very deep rooted patterns. Patterns are difficult to break and change. With self-discipline and awareness we can begin that journey to our desired identity. Who we are authentically. The person we always wanted to be when we grew up. This takes a lot of work but it is our responsibility to put in that effort!
The good news for me is that I do not have to do it alone! There is nothing that I can not take to God and he will give me strength to be steadfast and break those strongholds – those patterns!
One of my favorite scriptures is 2 Corinthians 10:4-5 “The weapons we fight with are not the weapons of the world. On the contrary, they have divine power to demolish strongholds. We demolish arguments and every pretension that sets itself up against the knowledge of God and we take captive every thought to make it obedient to Christ!”
I know that the Lord can help me redirect my thoughts, to acknowledge them quickly when I start to go down a negative path, to start a new pattern of redirection! To focus on what I want to find, what will seem real to me, what will grow, and what I will become!!!
Ultimately, regardless of what we are doing or what we are focused on, I think we all just want JOY in our lives. All day, every day! My dear friend Susan (love her too!), she tells me that if I am not living joyfully then I am robbing God of his joy. Psalm 16:11 “You have made known to me the paths of life; you will fill me with joy in your presence, with eternal pleasure at your right hand”. Gods’ sacrifice in itself brings us joy! His love for us brings us joy! He brings us comforts and pleasures that we fail to even recognize every single day — let alone thank him for them!
So with that, each day I will start with being thankful and considering every single blessing, comfort, strength, and protection that God provided for me from the day before. Then simply ask for his help to manage what it is that I am focusing on and then help me identify and redirect my thoughts when they are not serving me to become the person I want to be when I grow up!
Sometimes I just have to share great things, usually food! This is Argentine Pink Shrimp (tastes like lobster and can be purchased at D & W and Whole Foods for about $10 per pound).
It’s a simple recipe and very quick too!
Set Oven temp to 500
Toss the broccoli and mushrooms in olive oil
Roasted veggies 8 mins
Add Shrimp to cookie sheet and cook all for four more minutes
Drizzle with mix of 2 TBLS melted butter, 2 TBLS water, finely chopped chives
Serve over your choice of pasta or rice if desired
What’s for dinner tonight. Low Carb Mexican – Chicken Enchilada Stuffed Peppers! These were fabulous! I had to make them again and try it with a little beef. They could also be done without any meat, just increase the beans so you are still getting enough protein!
Ingredients:
3 medium bell peppers, any color
2 cups cooked and shredded chicken (I baked it while prepping the other ingredients)
1 (10oz) can enchilada sauce
1 (4oz) can diced green chiles
1/2 cup frozen corn
1/2 cup black beans, drained and rinsed
1/4 cup fresh cilantro, finely chopped
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp chili powder
1 cup shredded Monterrey Jack cheese, divided
1/4 cup chicken broth or water
Instructions
Preheat oven to 350 degrees. Spray a large baking dish with cooking spray and set aside.
Remove stems from peppers, slice iin half lengthwise and scrap out membranes and seeds. Set aside
In a large bowl, combine the chicken, enchilada sauce, green chiles, corn, black beans, cilantro, cumin, garlic powder, salt, chili powder and 1/2 cup of the cheese. Mix together
Pour chicken broth into the bottom of the prepared pan. Spoon the chicken enchilada filling evenly into the pepper halfs and place in the baking dish. Sprinkle the remaining 1/2 cheese over the top of the stuffed peppers.
Cover the pan with aluminum foil and bake in the preheated oven for 45 minutes. Remove aluminum foil and return to the oven to bake for an additional 10-15 minutes until peppers are soft and the cheese is melted. Serve with your favorite toppings, such as sour cream, diced avacado, dices tomato, and chopped cilantro. Enjoy!
I made this dish twice. The second time I used organic lean ground beef and had more filling then what was needed to fill the peppers. I placed it in a casserole dish and baked it along side the stuffed peppers and used it in a quick dinner the following evening. It was amazing.I also wanted to share the sauce that I used as it was in my refrigerator. It added just the perfect amount of heat and flavor too!
