Flank Steak and Fig Salsa

Discover the amazing flavors of fresh figs, mushrooms, and gorgonzola cheese over flank steak on a bed of arugula.  These flavors were accompanied with sides of green beans and roasted potatoes.  (647 calories per serving)

Here is the recipe – (Makes 2 servings)

Ingredients
2 cloves garlic
3/4 tsp kosher salt
1/2 tsp pepper
3 Tbls. olive oil, divided
12 ounces flank steak
1 cup chopped fresh figs
1 green onion, minced
2 Tbls. chopped fresh parsley
2 Tbls. rice wine vinegar
2 ounces crumbled Gorgonzola cheese

Step 1
Stir together first 4 ingredients and 1 Tbls. olive oil. Rub onto steak, cover and chill 30 mins to 4 hours.

Step 2
Preheat grill to 400 to 450. Toss together figs, next 3 ingredients, and remaining 2 Tbsp. oil. Salt and pepper to taste

Step 3
Grill steak to desired doneness and let rest for 5 minutes.

Step 4
Cut steak diagonally across the grain into thin strips and arrange on serving platter. Spoon fig Salsa over steak and sprinkle with Gorgonzola.
