My new favorite “made from scratch” food. ‘Fragrant Fennel Fronds Pesto’.
The garden we planted at an elderly friends is thriving, and so we have both been blessed already with the bounty of herbs and greens! Of course I can’t waste a thing..so I had to put them to use.
It’s simple and only takes about 20 minutes. Toast the walnuts over medium heat for 3-5 minutes until they start to turn golden.
Let cool.
Put everything in a blender except for 1/2 oil and
blend until smooth. Work in the remaining oil and/or a
little more oil or water to get your preferred consistency.
This can be used as a condiment, spread on bread or toast or as an appetizer, as a topper for your protein such as flank steak or chicken, or a simple pesto pasta dish!
Ingredients:
3 cups fennel fronds
1 cup roasted walnuts
1 lemon juiced
1 glove garlic
1/2 cup olive oil
Freezes up well for later use!
