Ingredients:
½ lb. boneless chicken breast sliced into thin strips.
½ medium onion, chopped.
3 garlic cloves, minced.
½ medium green bell pepper, sliced into strips.
½ medium colored bell pepper, sliced into strips.
1 teaspoon ginger, minced.
2 teaspoons lemon juice.
1 teaspoon sesame oil.
1 tablespoon low sodium soy sauce.
1 tablespoon hoisin sauce.
½ teaspoon ground black pepper.
½ teaspoon salt.
1 ½ tablespoon olive oil.
Directions:
• In a bowl, combine chicken, soy sauce, and lemon juice. Mix well and marinate for ½ an hour.
• Heat olive oil in a wok, then sauté ginger, garlic, and onion for 3 to 4 minutes.
• Add the marinated chicken and stir fry for 4 to 5 minutes.
• Put-in the salt, ground black pepper, hoisin sauce and sesame oil and continue to stir fry.
• Add red and green bell peppers and stir fry for 4 to 5 minutes more.
• Turn off heat. Transfer to a serving plate. (Serve with a side of rice if desired)
